Assim nasceu a curiosidade que os levaria, anos depois, a dominar técnicas tradicionais de maturação. O começo foi estudando queijos franceses, especialmente os tipos brie e camembert. Depois de dominar o método, veio o desafio: adaptar a técnica clássica para criar um produto autoral brasileiro. O processo exigiu tempo, tentativas e erros, e muitas receitas refeitas até chegar ao ponto ideal.
